cartoon balloons - how?

OK, I'm a noob to Alice. But for the life of me I can't figure out how to make cartoon balloons. It's probably ridiculously obvious, but...

it's the say method, in every object, they have a say method, you just type in what you want them to say and it will pop up in a text balloon
