In the first screen shot I would say that the folder control contains an object called "left button" (hopefully representing the button to the left on the stage) with a function called "depressed" that returns true when the "left button" object had been clicked on, or possibly when its feeling down , and two methods "raiseButton" and "depressButton" which cause the button to move up or down.
The function and methods are not provided by Alice and must be written by the user of the button class.

The "set text to" is classic Alice. The "time sign" is a 3D text object to get to the set text option:
  1. Add a 3d text object to your movie.
  2. Create or select the method you want to change the text of the 3D text object in.
  3. Select the 3D Text object and pick its property panel.
  4. Click on the Text property and drag it on to the stage.
  5. Make whatever changes you want.
